In case you didn’t know, the word “sushi” refers to the vinegared rice used to prepare this delicious Japanese dish topped with slices of raw fish. So if you want to perfect the art of making sushi, you need to know how to prepare the rice first.
You can either choose to cook sushi rice in a rice cooker or simply cook it on a stove top using non-stick pots such as So Intensive Enamel.
The rule of thumb when cooking sushi rice is using 1.2 cups of water for every cup of raw sushi rice. Don’t put too much water or else you will end up with a dough instead of rice.
Place your rice and water in a pot on high heat. Stir from time to time until the water boils. After that, lower the heat and cover the pot. Stop stirring at this point and check on the rice after 5 minutes. If the water level has lowered, your rice is ready. Otherwise, keep checking on the rice every minute, making sure not to burn the rice at the bottom.
You don’t need much to season the perfect sushi rice. You will need rice vinegar for perfect taste, salt and sugar. Adjust the ratio to your liking, there’s no rule for seasoning sushi rice. Pour the seasoning over your rice and mix gently until combined. Don’t over mix the rice otherwise it will get too sticky. Let the rice cool at room temperature then use it to prepare sushi.
