You can use 1 tbsp of the following Biryani mix to prepare all kinds of fish, meat and chicken Biryani dishes. For a healthier version, opt for cooking your meats using an electrical grill such as Optigrill + .
To prepare 1 cup of Biryani mix, you will need the following spices: 5 cinnamon sticks, 4 tbsp coriander, 1½ tbsp fennel, 2 anise seeds, 1 tsp cumin seeds, 2 bay leaves, 6 cardamom pods, 2 black cardamom pods, 1 tbsp cloves, 1 tsp black pepper and 2 tbsp caraway. You may add some red chili pepper if you’re a fan of spicy flavors but this ingredient is completely optional. Grind your ingredients using an electric spice grinder. After that, sift the whole to get rid of unwanted coarse elements. You need your Biryani mix to be nicely smooth when it’s time to cook. However, it’s possible to use whole black pepper seeds and cardamom pods. This depends on your preference!
